  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 2 ripe bananas, mashed
  • 1/4 cup honey or maple syrup (optional, for sweetness)
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts or berries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt. Mix them together and set aside.
  3. In another bowl, whisk together the mashed bananas, applesauce, Greek yogurt, honey or maple syrup (if using), eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  5. If you want to add nuts or berries, gently fold them into the batter.
  6. Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.
  8. Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

These sugar-free muffins without wheat flour are a great gluten-free option. They’re still delicious and can be customized with your choice of nuts or berries. Adjust the sweetness by using honey or maple syrup as desired. Enjoy!
