Spicy Tofu Kimchi Stir-Fry

Ingredients
- 1 block of firm tofu
- 1 cup kimchi, chopped
- 1 tablespoon sesame oil
- 2 cloves of garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1 tablespoon rice vinegar
- 1 green onion, sliced (optional, for garnish)
- Cooked rice or noodles (optional, for serving)
Instructions
- Press the tofu to remove excess moisture. Cut the tofu into cubes or desired shapes.
- Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the tofu cubes to the skillet and cook until they turn golden brown on all sides, stirring occasionally.
- In a small bowl, mix together soy sauce, gochujang, honey or maple syrup (if using), and rice vinegar to create the sauce.
- Push the tofu to one side of the skillet and add the chopped kimchi to the other side. Sauté the kimchi for a few minutes until it becomes slightly tender.
- Pour the sauce over the tofu and kimchi, stirring well to coat everything evenly. Continue to cook for another 2-3 minutes until the sauce thickens slightly and the flavors meld together.
- Remove the skillet from heat. Garnish with sliced green onions, if desired.
- Serve the spicy tofu and kimchi stir-fry on its own or with steamed rice or noodles for a more substantial meal.
