Spicy Tofu Kimchi Stir-Fry

Ingredients

  • 1 block of firm tofu
  • 1 cup kimchi, chopped
  • 1 tablespoon sesame oil
  • 2 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1 tablespoon rice vinegar
  • 1 green onion, sliced (optional, for garnish)
  • Cooked rice or noodles (optional, for serving)

Instructions

  1. Press the tofu to remove excess moisture. Cut the tofu into cubes or desired shapes.
  2. Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the tofu cubes to the skillet and cook until they turn golden brown on all sides, stirring occasionally.
  4. In a small bowl, mix together soy sauce, gochujang, honey or maple syrup (if using), and rice vinegar to create the sauce.
  5. Push the tofu to one side of the skillet and add the chopped kimchi to the other side. Sauté the kimchi for a few minutes until it becomes slightly tender.
  6. Pour the sauce over the tofu and kimchi, stirring well to coat everything evenly. Continue to cook for another 2-3 minutes until the sauce thickens slightly and the flavors meld together.
  7. Remove the skillet from heat. Garnish with sliced green onions, if desired.
  8. Serve the spicy tofu and kimchi stir-fry on its own or with steamed rice or noodles for a more substantial meal.
