Vegan Lentil Soup

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 can (400g) diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables have softened.
  2. Add the dried lentils, vegetable broth, diced tomatoes (with their juices), and dried thyme to the pot. Stir well to combine.
  3. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  4. Taste and adjust the seasoning if needed. Serve the vegan lentil soup hot, garnished with fresh parsley.
