Vegan Lentil Soup
Savor the comforting flavors of this nourishing Vegan Lentil Soup. Made with hearty lentils, a medley of vegetables, and aromatic herbs and spices, this soup is a bowlful of wholesome goodness. With its rich texture and satisfying taste, it’s the perfect dish for a cozy and nutritious meal.
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 can (400g) diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables have softened.
- Add the dried lentils, vegetable broth, diced tomatoes (with their juices), and dried thyme to the pot. Stir well to combine.
- Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
- Taste and adjust the seasoning if needed. Serve the vegan lentil soup hot, garnished with fresh parsley.
