Ingredients:

  1. 2 ripe bananas
  2. 1 cup rolled oats
  3. 2 eggs

Instructions:

  1. In a blender or food processor, combine the ripe bananas, rolled oats, and eggs. Blend until you get a smooth batter.
  2. Heat a non-stick pan or griddle over medium heat. If needed, lightly grease the pan with cooking spray or a small amount of oil.
  3. Pour a small amount of the batter onto the pan to form a pancake. You can make them as big or as small as you like.
  4. Cook for about 2-3 minutes on one side, until you see bubbles forming on the surface.
  5. Flip the pancake and cook for another 2-3 minutes on the other side until golden brown.
  6. Repeat the process with the remaining batter.
  7. Serve the pancakes warm with your favorite toppings, such as fresh berries, Greek yogurt, or a drizzle of honey.

These banana oat pancakes are naturally sweetened by the bananas and packed with fiber from the oats. They’re a nutritious and delicious way to start your day!
